Croque Madame

Ingredients

  • 1 slice brioche
  • 100g ham (thinly sliced)
  • 100g Gruyère or Emmental cheese, grated
  • 20g butter
  • 1 egg
  • Pickles
  • Chives (optional)

Bechamel Sauce

  • 20g butter
  • 20g flour
  • 250ml whole milk
  • 50g Gruyère cheese, grated
  • Salt & white pepper to taste

Instructions

Step 1

To make the Bechamel sauce, melt butter in a saucepan, whisk in flour, and cook for 1 minute. Slowly whisk in the milk, stirring until thickened. Add Gruyère, season with salt and pepper, and stir until smooth.

Step 2

Toast up the bread, fry an egg with butter, set aside.

Step 3

Assemble the Sandwich by layering Bechamel sauce on the toast, with ham and pickles on top.

Step 4

Place the fried egg on top of the sandwic, finish with more cheese and chives, and serve immediately.
